The gap they wanted to fill
Laredo's dining scene ran on Tex-Mex and fast food — great, but fresh and fast wasn't on the menu. Alan, Paola, and Mario saw the gap and built something to fill it.
A family opened the doors in 2024
A brother, a sister, and her husband — three family members convinced that a salad done right could be every bit as satisfying as anything else in town. Greta was a personal bet, not a corporate concept.

The Greta Salad, Chipotle Pasta, Buffalo Wrap — all starting points. With 30+ fresh toppings, you could eat here every day and never order the same thing twice.

One location became two
Greta opened on Rocio Drive and grew to a second spot on Bob Bullock Loop in under a year. Laredo was ready — and the mission hasn't changed.
